KT Watson- My Introduction to Religion of Ecology

I have transcribed and translated notes regarding my thoughts on this class and related readings. 

I came into this class with very little knowledge or understanding of the spiritual side of ecology, and not knowing what to expect.  The beginning discussion on the sacred exchange of energy, how no matter what something has to die in order for you to survive made me think --we had to kill other organisms (plants and animals) to live. We as a society have become alienated from our food source, buying food from chain grocery stores, distancing ourselves from the associated death.  In high school, one of my teachers was telling a story about his wife, how she thought chickens had eight legs because that's how many came with KFC family buckets: she was 20 years old at the time.  In first world countries, we tend to only have abstract ideas of the agricultural processes, knowing the basics of farming and the meat industry with no actual interaction.
